One of street food franchise owner in Delhi stated that they are not competing against
luxurious restaurants but they want to delight people with delicious food items
at reasonable prices. In India Street food preparation and selling provide
employment opportunities for millions of people. Street foods are often regarded
as cost-effective, small pocket families didn’t afford to dine out in luxurious
restaurants hence street foods are convenient way to chill out for them. Though
some people doubted purity of foods available on roads, local vendors don’t
follow standard food and safety measures. To encourage local hawkers towards
healthy food hygiene government has started various training programs to help
vendors to use standard food and safety methods to prepare foods.
Mumbai, Delhi, Kolkata and Chennai are cities where
collectively 3 million medium sized vendors sell vada pav, panipuri, idli,
samosa, and so on. Present condition of street food vendors in these cities is
vulnerable as sales rate decrease due to entry of luxurious restaurant chains.
Chatar Patar was established only with an aim to provide quality foods prepared
instantly in front of consumers. The concept was developed to offer variety
snacks while following standard practices, till date everything is working
extensively. Government of India took various measures to give power to slow
down street food market. Street foods revenue generated impacted socio-economic
condition of middle class families living in the country. Various rules and
regulations adapted to uplift poor condition of local vendors or hawkers. After
demonetization condition of small and medium sized business operate in food and
beverage industry is improved. More and more people are eyeing on fast food
franchise running on streets because foods at luxurious restaurants become
costlier as GST introduced from 1 July 2017. Moreover goods and service tax create
